Today is Bratwurst Day! It’s also my second day at Disney World, so this is gonna be pretty short. While I wouldn’t go out of my way to have a beer brat, this is a pretty solid recipe. Tasty, charred, and braised bratwurst along with some sautéed onions in a mustard-slathered bun. What's not to like? I mean, it's not a bold dish, but it delivers on a weeknight.
Beer Brats
4 bratwurst sausages
Oil
1 large onion, peeled, halved, and sliced ¼” thick
1 beer (lager style)
4 buns
Whole grain mustard
Pickles (optional)
Preheat a cast iron skillet. Brown the sausages for 3 minutes, then 2 minutes on every other side. Remove from the skillet and reserve.
Add some oil to the skillet, and sauté the onions, with a pinch of salt, until beginning to soften. Then place the sausages on top of the onions and pour in the beer. Bring to a boil, then reduce the heat to medium. Cover the skillet with a lid or some heavy duty foil and sauté for about 8-10 minutes.
Remove the cover and sausages. Turn up the heat and keep braising the onions, uncovered, until the beer is nearly evaporated.
Cover the bun interiors with the mustard. Add a few sliced onions, top with the sausage and more onions. Serve with pickles as a garnish, if desired.
