2022 Vuelta - Stage 1: Utrecht
Welcome to Holland (record scratch).Yes, this year’s La Vuelta kicks off in the Netherlands. For me, though, this race kicks off while I’m traveling back home from my family vacation. So, I won’t be able to watch any coverage, but will catch some footage over the weekend. Today’s regional dish is called Stamppot and is simple and delicious: sautéed sausage served atop garlic-mashed potatoes studded with kale.
Stamppot
4-5 russet potatoes
2 cloves garlic, peeled and smashed
2 shallots, fine diced
3 heaping handfuls of chopped kale
1 kielbasa
½ stick of butter
⅓ cup heavy cream (or milk)
Peel and largely dice the potatoes. Place in a pot of water, along with the garlic, shallots and a heavy pinch of salt, and bring to a boil. Once the pot reaches a boil, add in the kale and lower the heat to maintain a simmer. Cook for 20 minutes. Then, drain and mash together with the butter and cream, seasoning with salt and pepper as needed.
While the vegetables simmer, brown the sausage on each side. Remove from the skillet and slice on a bias and brown in some oil in the skillet. Serve everything together.
