Roasted Asparagus with Pine Nuts and Manchego

2023 Vuelta España - Stage 10: Valladolid.


After a well-deserved rest day comes a fast time trial stage of only about 16 miles. I decided to follow suit and make a quick side for you all today. This comes together quickly and would be a tasty accompaniment to any main dish you might be serving up. It is full of warm nutty flavors between the quick roasted asparagus, pine nuts, and just melted manchego cheese with a nice hammy palate punch from whichever cut you desire. I used Ibérico, but you can use the easier-to-find and more thinly sliced serrano or prosciutto.

Savory Asparagus

  • 1 bundle of asparagus

  • Few slices of Ibérico ham (Serrano or Prosciutto work too)

  • 2 tbsp pine nuts

  • ~¼ lb manchego cheese, sliced

  • Olive oil

Preheat the oven to 350 degrees. Meanwhile, slice the ham into thin strips.


Add the asparagus to a casserole dish. Sprinkle the ham all over, followed by the pine nuts.


Top with the sliced cheese and drizzle with olive oil. Season with salt and pepper.


Bake in the oven for 15 minutes.


Turn on the broiler and toast for a few minutes until the cheese begins to melt and brown.
