2022 Tour de France - Stage 19: Castelnau-Magnoac to Cahors.
Had a 12 hour day at work today and about to go see my niece in a musical. So, here’s today’s stage-specific dish: Pumpkin Soup. Because work has been so crazy this week, I made a quickie version. I know it's hot; sorry.
Pumpkin Soup
1 onion, peeled and chopped
1 large tomato, diced
2 garlic cloves, smashed
Dried thyme
14.5 oz can of navy or cannellini beans
28 oz can of pumpkin puree (NOT the pie mix!)
1 cup of veggie stock (more may be necessary)
Cream
Sauté the onion and tomato in olive oil, with a pinch of salt, until the onion begins softening. Stir in the garlic until fragrant. Stir in 1 tsp of the dried herbs.
Add in the beans (and the soaking liquid from the can) along with the pumpkin and stock. Bring to a boil and reduce to a simmer to cook for a few minutes.
Use an immersion blender (or transfer to a blender) until smooth. Taste for any seasoning needs. Stir in ⅓ cup of cream to lighten the soup and season once more, if necessary, and serve.
