2023 Vuelta España - Stage 12: Olvega to Zaragoza.
Yesterday was our 2nd wedding anniversary and there must always be bubbly of some sort. It was also an extremely hot day and something light, but festive, was in order. If you want to check off all of those boxes, plus easy & elegant…and sexy (what’s hotter than sucking on some booze-infused peaches?), this dessert has it all for you.
Peaches in Moscato
3 ripe (but firm) peaches
Moscatel (or the easier to find Moscato)
Place the peaches in a bowl and cover with boiling water. Let sit for at least 5 minutes. The skin will lose its color and begin to soften.
Remove 1 peach and try to rub away the skin. If it moves easily, they are ready. Remove the skin from all of the peaches and slice into 6ths or 8ths.
Place the sliced peaches in a bowl and cover with moscato. Cover and set in the refrigerator for 3-6 hours, flipping once.
To serve, place some sliced peaches in a large coupe or wine glass and spoon the moscato over the peaches. Serve.
