Giro d’Italia - Stage 5: Atripalda to Salerno
A sloppy day in the Giro today saw a few crashes in the first hour of racing. Even though the riders were taking it slow (due to the rain), there was a crash in the small breakaway group in the first few minutes of the day. Then, a stray dog ran into the front tire of a cyclist. The rider went left on the pavement while his bike careened off to the right towards the bulk of the peloton and the World Champion, taking him and a few other riders out. This is not the first time a dog has caused havoc in the Giro.
Just like you can’t expect a stray dog to mess up your day of cycling, you’d think you could trust every recipe in a book full of amazing recipes. However, that was not the case. I made a pretty involved shrimp dish for today’s stage. It was shrimp two ways with a baked rice ring and a cream based sauce. The measurements must’ve been translated incorrectly, because I knew the sauce was likely going to be a problem and it surely turned out to be a pain in the ass I had to triage. Then the shell-on shrimp were not easy to peel when eating.
So, I decided to cut the dish from this series. Since the ride ended in Salerno, roughly 25 miles from Positano, I decided to whip up something quick from our honeymoon there. Our house was above Pupetto Beach Club where we enjoyed a rest day of our own on the beach, eating some delicious bites of calamari, bruschetta, and my first-ever Limoncello Mojito! This drink is perfect on a warm summer day and blends both tart and sweet just perfectly. So, when life throws you a lemon, make limoncello mojitos!
Limoncello Mojito
Lime
Leaves from 3 sprigs of mint + 2 more sprigs for garnish
1 tbsp superfine sugar
½ lemon, cut into 4 pieces
Limoncello
White Rum
Seltzer or Pellegrino
Cut two thin slices from the lime and reserve. Cut the remaining lime into 4 equal pieces.
Add a splash of tap water, the mint, and sugar into a cocktail shaker. Muddle about 10 seconds.
Add in the cut lemon and lime pieces and continue to muddle until all the juices have come out of the citrus.
Pour in equal parts of limoncello and rum, roughly 3 oz of each. Top off with ice and cover the shaker. Shake vigorously for about 30 seconds.
Fill 2 Collins glasses with ice and pour the shaker contents into the glass, through the strainer. Top off each with some fizzy water and stir.
Garnish with a sprig of mint and the reserved lime slice and serve.
