Anora was a really great movie. It had everything: humor, drama, action, drugs, a love story, New York City, violence, international relations, and even strippers. This movie reminded me of the great classic My Cousin Vinny. However, given the prevalence of strippers and sexual content, this movie will not be a cable classic. I highly recommend you seek it out on a streaming service. Without giving anything away, I wanted to focus on the Russian aspect and the differences within the context of the movie, and this dish stands-up to the quality of the movie in all regards. It too has everything: potatoes, fish, onions, beets, carrots, mayo, eggs, and dill. There's even a fur coat in the movie! This would be a great appetizer for a fancy night-in or dinner party. It would also be really excellent on a hot summer day.

Herring Under a Fur Coat from Food & Wine, Bonnie Morales
2 large beets
2 carrots, peeled and cut in half, crosswise
2 medium yukon gold potatoes, peeled
2 hard boiled eggs
1 cup finely-chopped pickled herring
½ small sweet onion, minced
¼ cup canola oil
2 tbsp chopped fresh dill and sprigs for garnish
½ cup mayonnaise
Kosher salt
Wrap the beets in foil and roast in the oven at 450 degrees for an hour.
Meanwhile, place the prepared carrots and potatoes in a pot of lightly salted water and bring to a boil.
Lower the heat to medium and continue to cook, removing the carrots after 15 minutes; followed by the potatoes 5 mins later.
Allow the veggies to cool to room temperature after cooking.
Then, grate using the medium holes on a box grater in order of potatoes, carrots, then the roasted, cooled, and peeled beets. Keep the grated veggies in separate bowls.
While the veggies are cooling, separate the boiled yolks from the egg whites. Press teh whites through a sieve into a small bowl.
Rinse out the sieve and repeat with the egg yolks and keep in a separate bowl.
Mix the minced herring with the onion, oil, and chopped dill.
Mix 2 tbsp of the grated beets with the mayonnaise.
To assemble, place a 4” ring mold on a dish. Put about ¼ of the potatoes in the ring and press down with the back of a spoon. Season with some Kosher salt. Then spoon ¼ of the herring mixture and press it down.
Next, place ¼ of the carrots, followed by ¼ of the beets and press down. Season with more Kosher salt.
Add 2 tbsp of the beet mayo and spread on top.
Sprinkle on the egg whites, followed by the yolks.
Clean the plate from any loose food items and remove the ring.
Garnish with dill sprigs and serve.
