Fruit & Cheese? Yes, please!

2023 Tour de France - Stage 6: Tarbes to Cauterets-Cambasque.

Today was a grueling day on the Tour, including 3 huge mountain climbs. But, after the climb, there is always a lovely downhill respite. Similarly, today’s stage-specific dish can be a bit of a chore to prepare, but these tasty little treats go down fast and easy. Typically, this dish uses a soft sheep’s milk cheese, but I couldn’t find any at my local cheese shop, so I swapped in goat’s cheese and it tasted great. These little appetizers pair well with cider, wine, or beer, a true crowd pleaser.

Stuffed Prunes

  • Pitted prunes

  • Goat cheese (or soft sheep’s milk cheese)

Place the cheese out on the counter for 20-30 minutes to soften up for ease of stuffing.

Meanwhile, using a small, dull knife, find the opening of the pitted prunes and wiggle them open. Then, place your fingertip into the prune and open it up, pushing it down onto a work surface so the bottom flattens out and they will stand on their bottom. Using your index finger or thumb works best.

Once you have the prunes opened up, using a small spoon, dig out a portion of cheese and using your finger as a guide, press the cheese down into the prune. Repeat until all the prunes you desire are filled.

Serve with a chilled beverage of your choosing. ______________________________ Copyright 2023, Brendan McCann, All Rights Reserved.
