Eton Mess

Today kicked-off the beginning of my beloved Tottenham Hotspur’s Premier League season. The last few years have been kind of a mess. Multiple coaches, bad transfers, bad ownership (the owner now a subject of financial scandal), a complete shift to a defensive style-of-play, and now the loss of their star player - who will go unnamed because he is dead to me. It seemed a no-brainer that I would make Eton Mess today, especially since the origin of this dessert is less than 20 miles west of today’s opponent, Brentford. The game ended in a draw and possession was dominated by the Spurs…just need someone to step up to be the guy to score. But, I won (ultimately) by eating this delicious dessert.

Eton Mess

Once the meringues have baked and cooled, crush them into little pieces.


Hull, halve, and dice the strawberries (about 6 per person). Add them to a bowl, along with some sugar and a squeeze of lemon juice. Mash-up with a potato masher until mushed and juicy and set aside.


Set some cream in a bowl with some sugar and whip into medium peaks with a whisk or hand mixer.


To assemble, spoon some of the macerated berries into a bowl or small glass, top with some whipped cream, followed by more berries, more cream and one last layer of berries.


Top with the crumbled meringue and garnish with a strawberry halve.
