Are you a pizza-with-anchovies person, or a hold-the-anchovies person? While I don’t mind incorporating anchovies into certain sauces and dishes, I like them to be non-visual hints of anchovy. I once had a caesar salad with whole anchovies laying atop the chopped romaine…it was disgusting. Emulsify them into the dressing? Now we’re talking! It doesn’t happen often, but I hate it when it does: today’s recipe I referenced for Onion Coca was a big, fat fail. Not only were the anchovies off-putting, they imparted an unpleasant flavor onto an otherwise delicious combination of beautifully sauteed onions and kalamata olives. But, the anchovies weren't the only problem. The bread recipe on this was not great either.
